Ingredients:
- 1 tbsp olive oil
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup red bell pepper, diced
- 1/2 cup tomato, chopped
- 1 cup Arborio rice (or short-grain rice)
- 1 1/2 cups chicken broth
- 1/2 cup white wine
- 1/2 tsp saffron threads
- 6 large shrimp, peeled and deveined
- 6-8 mussels, scrubbed and debearded
- 4 scallops
- 1/4 cup frozen peas
- Salt and pepper to taste
- Fresh parsley for garnish
- Lemon wedges for serving
Instructions:
- Heat olive oil in a large skillet over medium heat. Add the onion, garlic, and red bell pepper, cooking until softened, about 3-4 minutes.
- Stir in the chopped tomato and cook for another 2 minutes. Add the rice and cook for 1 minute, stirring to coat in the oil and vegetables.
- Add the chicken broth, white wine, saffron, salt, and pepper. Bring to a simmer, then cover and cook for 15 minutes, without stirring, until most of the liquid is absorbed.
- Add the shrimp, mussels, and scallops on top of the rice. Cover and cook for another 5-7 minutes until the seafood is cooked through and the mussels have opened.
- Add frozen peas and cook for an additional 2 minutes, then remove from heat.
- Garnish with fresh parsley and serve with lemon wedges on the side.
