Ingredients:

  • 3 ripe persimmons, peeled and chopped
  • 2 cups fresh cranberries
  • 1 ½ cups sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground ginger
  • ¼ cup lemon juice
  • ½ cup water
  • 1 tablespoon pectin (optional)

Instructions:

  1. In a large saucepan, combine the persimmons, cranberries, water, and lemon juice. Cook over medium heat, stirring occasionally, until the cranberries burst and the persimmons soften, about 15 minutes.
  2. Use a potato masher or immersion blender to break down the fruit mixture into a smooth consistency.
  3. Stir in the sugar and spices, then bring the mixture to a boil. Reduce the heat to simmer and cook for 25-30 minutes, stirring frequently, until the jam thickens.
  4. If using pectin, stir it in and cook for an additional 5 minutes.
  5. Test the jam’s consistency by placing a spoonful on a chilled plate. If it wrinkles when pushed, it’s ready.
  6. Pour the hot jam into sterilized jars, seal, and let it cool before storing.
