- 12 oz (340 g) rigatoni or ziti pasta
- 3 large onions, thinly sliced
- 3 tbsp butter
- 1 tbsp olive oil
- 2 tbsp all-purpose flour
- 1 1/2 cups milk
- 1 cup shredded Gruyère cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Optional: breadcrumbs for topping
Instructions:
- Preheat oven to 375°F (190°C). Cook pasta until al dente, drain, and set aside.
- In a large skillet, heat olive oil and butter over medium-low heat. Add onions and cook, stirring occasionally, until deeply caramelized, about 25-30 minutes.
- Sprinkle flour over the onions and cook for 1 minute. Gradually whisk in milk, stirring until thickened. Season with salt and pepper.
