Equipment

  • 1 Large skillet
  • 1 rimmed baking sheet or casserole dish
  • 1 Basting Brush
  • 1 knife

Ingredients

For the Sliders:

  • 1 tablespoon olive oil
  • ½ yellow onion thinly sliced
  • ½ green bell pepper thinly sliced
  • ½ red bell pepper thinly sliced
  • 1 clove garlic minced
  • ½ –¾ pound very thinly sliced beef ribeye, tenderloin, or shaved steak
  • 1 tablespoon Worcestershire sauce
  • Sliced provolone cheese
  • 12 King's Hawaiian sweet buns or slider rolls

For the Butter Topping:

  • 1 ½ tablespoons melted butter
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon dried thyme or Italian herb seasoning

Instructions

  • Prepare the Oven: Preheat your oven to 400°F (200°C) to ensure it’s ready for baking the sliders.
Use the middle rack for even heat distribution.
This step helps the cheese melt perfectly and the buns toasting lightly while keeping the beef juicy.
  • Slice the Vegetables: Thinly slice the yellow onion and both green and red bell peppers.
The goal is to have even, thin strips that will cook quickly and blend well with the beef.
Mince the garlic finely to ensure it distributes flavor evenly throughout the meat and vegetables.
  • Sauté the Vegetables: In a large skillet, heat 1 tablespoon of olive oil over medium heat.
Add the sliced onions and bell peppers, stirring occasionally. Cook until the onions become translucent and the peppers are tender, about 5–7 minutes.
This softening process enhances the natural sweetness of the vegetables.
  • Add the Garlic: Once the vegetables are soft, stir in the minced garlic and cook for about 30–45 seconds until fragrant.
Be careful not to burn the garlic, as it can become bitter.
This step infuses the sautéed vegetables with a warm, aromatic flavor that complements the beef.
  • Cook the Beef: Add the thinly sliced beef to the skillet with the vegetables.
Pour in 1 tablespoon of Worcestershire sauce to enhance the savory depth.
Stir constantly and cook until the beef reaches medium doneness, about 3–5 minutes depending on thickness.
Ensure each piece is evenly cooked while keeping it tender.
  • Prepare the Buns: While the beef is cooking, slice the Hawaiian sweet buns horizontally, keeping the top and bottom halves intact to hold the filling.
Lay the bottom halves cut side up on a rimmed baking sheet or in a casserole dish to form the base for your sliders.
  • Assemble the Sliders: Evenly distribute the cooked beef and sautéed vegetable mixture across the bun bottoms.
Lay slices of provolone cheese on top of the beef to ensure every bite has that creamy, melty texture.
Place the top halves of the buns over the cheese gently.
  • Prepare the Butter Topping: In a small bowl, mix 1 ½ tablespoons of melted butter with 1 teaspoon Worcestershire sauce and ½ teaspoon dried thyme or Italian herb seasoning.
This topping adds flavor, moisture, and a golden finish to your sliders.
  • Brush the Buns: Generously brush the butter mixture over the top of each slider bun.
Make sure to cover the entire surface to enhance flavor and give the sliders a visually appealing golden-brown finish after baking.
  • Bake the Sliders: Cover the sliders with foil to prevent the tops from browning too quickly.
Bake in the preheated oven for 15–20 minutes, or until the cheese is fully melted and the sliders are heated through.
Baking also allows the flavors to meld beautifully together.
  • Serve and Enjoy: Remove the foil and let the sliders cool for 1–2 minutes.
Serve immediately while warm. These sliders are perfect for parties, game days, or an easy weeknight dinner.
The combination of tender beef, sautéed peppers, and melty provolone ensures each bite is rich, savory, and completely satisfying.

Notes

  • Freeze the beef for about an hour before slicing to make it easier to shave very thin.
  • Use sweet Hawaiian rolls for a perfect balance of soft, fluffy texture and slight sweetness.
  • Adjust bell pepper and onion quantities according to preference for more or less veggie flavor.
  • For extra cheesiness, layer provolone both under and over the beef mixture.
  • You can prepare the sliders in advance and bake them just before serving for convenience.
